BANANA BREAKFAST COOKIES

Yield: 11 cookies

3 ripe bananas
1 1/2 cups rolled oats
1/4 cup peanut butter
1 teaspoon vanilla
1/2 teaspoon cinnamon
1/2 cup unsweetened coconut
1/3 cup dried fruit, such as raisins, dates
1 tablespoon honey
Pinch of salt

Heat oven to 350 degrees. In large bowl, mash bananas with fork. Stir in oats, butter, honey, vanilla, salt and cinnamon until well combined. Fold in coconut, nuts and dried fruit. Let mixture set 10 minutes. Drop by quarter-cupfuls onto parchment-lined baking sheet. Flatten cookies with a fork. Bake 22-25 minutes or till golden. Cool on baking sheet a few minutes. Transfer to cooling rack.
